Potatoes Dauphinios (Scalloped Potatoes)-Take Three, Four, Five,…

After a two year hiatus, I’m back writing about cooking. It didn’t mean I stopped cooking. I’ve been cooking a lot and have much to write about.

I have been trying to find a good recipe for scalloped potatoes. In the past I’ve tried different recipes and tried to tweak some recipes I have, but the potatoes don’t come out the way I want. I had dinner at LB Steak one night and noticed the way they made scalloped potatoes was to grate the potatoes as one would when making hash browns instead of making round slices. The potatoes seem to be cooked better that way. So, I tried making a small casserole dish of scalloped potatoes using a grater on the potatoes; and yes, the potatoes cooked better. While my wife liked it, she preferred the old way with round slices. So, I continued to tweak the recipe. Then I came across a YouTube video from the Barbecue Pit Boys for barbecue scalloped potatoes. A couple of things I changed on the recipe was adding paprika, and instead of adding raw onions I sautéed them until translucent. The idea to adding bacon I thought was great. Instead of using the barbecue I used the oven, and the potatoes came out pretty good. I’m still in the process of tweaking the herbs and spices, but I believe I have a winner with this scalloped potatoes recipe.
